One evening I went to a party the Spanish girls were having at their place in West London and tried this excellent recipe.
Ingredients
- 400g boiled chickpeas
- 100ml olive oil
- 3x cloves of garlic (peeled)
- 3x tablespoons of tahine
- half a lemon
- 3x teaspoons sweet paprika
- 1x teaspoon spicy paprika
- salt and water to taste
Cooking Instructions
STEP 1: Pour the chickpeas into a bowl or food processor container, ideally with some water (100ml or so) left over from boiling them. Add the olive oil, garlic cloves, 3 tablespoons of tahine and teaspoons of sweet and spicy paprika. Crush the lemon over the top to get the juice out.
STEP 2: Blend the ingredients together, adding water and salt to taste. Be careful not to over-blend the mix, its nice when the paste retains some of the roughness of the chickpeas.
STEP 3: Serve on a plate and sprinkle with sweet paprika. Make sure you have some mediterranean flat bread handy for dipping in with.
